Default Phase One Chili

When the Fat Smash Forum was up and running, I passed this recipe by the folks over there and they agrred that this was cool for phase one. I apologize for the caps, it is how it was saved on my computer.
VEGETARIAN CHILI
THIS DISH IS COOKED IN A CROCKPOT
MAKES MANY SERVINGS
1 MEDIUM ZUCCHINI CHOPPED
1 MEDIUM GREEN BELL PEPPER CHOPPED
1 MEDIUM ONION CHOPPED
1 CUP THINLY SLICED CELERY
2 CANS CORN (OR 1 10-OUNCE PACKAGE FROZEN)
1 CAN BLACK BEANS, RINSED AND DRAINED
2 CANS KIDNEY BEANS (WHITE OR RED) RINSED AND DRAINED
2 CANS DICED TOMATOES (PLAIN OR FLAVORED)
1 CAN VEGETARIAN REFRIED BEANS, DRAIN OIL BEFORE ADDING
1 CUP BOTTLED SALSA (ANY TYPE… AS MILD OR HOT AS YOU LIKE)
OREGANO TO TASTE
CUMIN TO TASTE
CHILI POWDER TO TASTE
CAYENNE PEPPER TO TASTE
GARLIC TO TASTE

IN LARGE CROCKPOT COMBINE ZUCCHINI, BELL PEPPER, ONION, CELERY, CHILI POWDER, OREGANO, CAYENNE PEPPER AND CUMIN. STIR IN UNDRAINED TOMATOES, CORN, DRAINED BEANS, SALSA, AND REFRIED BEANS. MIX WELL!

COVER, COOK ON LOW HEAT FOR 8-10 HOURS, OR HIGH-HEAT FOR 4-5 HOURS. FOR BEST RESULTS, LEAVE COVER ON FOR THE FIRST THREE HOURS. STIR OCCASSIONALLY AFTER THAT.

DO NOT TOP WITH CHEESE OR SOUR CREAM. YOU MAY USE PLAIN YOGURT IF YOU DESIRE A SOUR CREAM-LIKE TOPPING.
