Default Delicious Chicken Parmesan PHASE 2

CHICKEN PARM:

**This serves 2 people!!**

Ingredients:

1 cup slow cooked oats
2 3-4oz boneless chicken breasts
2 tbsp. non fat plain yogurt
1 tbsp. olive oil
3 garlic cloves (diced)
28oz. can of diced tomatoes
1/2 tbsp. Garlic salt
1.5 tsp. of balsamic vinegar
Ground black pepper
Dried or fresh Basil
Dried or fresh Oregano
Dried or fresh Thyme
1/4 tsp. crushed red pepper (or more if you like!)
8 pitted Kalamata olives (diced)
4oz. low fat shredded mozzarella (non-fat just won't do the trick)
4oz. brown rice spaghetti

Preheat oven to 375.

SAUCE:

Pour olive oil in a pan and spread thin all over the pan, add garlic. Before garlic browns, add diced tomatoes, vinegar, and spices to taste. Let boil. Cover and simmer for about 10-15min on low. If sauce is watery, drain a little of the water out of the pan. In a blender or food processor, blend for 15 seconds or so. Cover and set aside.

BREADING:

In a food processor grind oats until they have a powdery like consistency.
Pour oats onto a flat plate and season with garlic salt. Spread the yogurt on to a flat plate. Dip chicken breast in to the yogurt, then in to the oats. On a baking sheet covered with foil, place chicken breasts about 3 inches apart.

Bake for about 35 minutes.

In the meantime, boil brown rice spaghetti in water, drain.

To each breast add some sauce, and top with kalamata olives and cheese.

Bake for an additional 5-7 minutes until cheese is melted and golden.

To serve:

Pour left over sauce on spaghetti, top with chicken and ENJOY!!!!!!
