Default Stuffed Green Peppers! (Phase I)

This is so YUM-O! I had it last night and it filled me up!

This serves 5 people!

1 pound soy-less meat-less ground meat
1 small onion, chopped (I excluded this, don't like onions)
2 cups Success Whole Grain Brown Rice Mix in Southwest Chipotle flavor (this is what i used but you can use just plain brown rice if you like, i wanted flavor though)
5 medium,round green peppers
3 cups any brand tomato sauce


Preheat oven for 425

Cut off tops of green peppers and clean seeds out. Boil in large pot for 5 minutes or untill peppers are a dull green.
Brown beef with onion. Add uncooked rice and 2 cups of tomato sauce. Keep on simmer until rice is tender.

Place peppers in a deep oven pan that is lined with aluminum foil. Fill peppers with meat/rice mixture. Pour remaining cup of tomato sauce over peppers. Place in oven and cook for 20 minutes.

This recipe sounds yummy but I'm confused. Can anyone give an example of what soy-less meat-less ground meat is? I'm going grocery shopping for Phase I this week and I need to know what I'm looking for!

You can find it in the organic aisle at your local supermarket. It's next to the Boca, Morningstar, etc. burgers...that's where i found it at least

If you like the authentic spiciness of "chiles rellenos" use Poblano peppers instead of green peppers. If you're into phase II you can put cheese in them too.

I made these but I added cooked brown rice, chipotle seasoning, and stewed tomatoes! BAM!!

I tried this recipe and I loved it..instead of tomatoe sauce i blended up some tomatoes with onions and some hot peppers

I wanted to try this recipe but didn't find the meatless item so I mixed refried beans with brown rice and pico then stuffed the peppers. YUM! In phase II I'll add cheese.

Great recipe, I added a little tofu, green onion, red bell peppers, onion, and uncle ben's santa fe brown rice. It was delicious!
