I made this today and it was YUM-O!
Shred about 1/2 of a zucchini
Mix with 3 tablespoons of egg whites (Equal to 1 large egg)
I added a couple chopped chives as well as Italian seasoning, black pepper and red pepper.
If you are on phase 2 sprinkle some parmesean cheese
It should be a pretty thick consistency just scoop it all into the skillet, sort of like a pancake and let brown, I flattened mine really thin because I like it pretty brown with a crisp.

Add whaever spices you like
Green onion or whatever sort of onion you prefer
Sautee in olive oil
