Default P1:No Cream Creamy Broccoli Soup

I found this on the Kraft foods recipe site and i thought i would share - i'll let you know how tasty it is, it did have a very high ratings.... (I substituted brown for white rice and skim for 2% milk).

No Cream Creamy Broccoli Soup
Prep Time: 15 min
Total Time: 35 min
Makes: 8 servings, 1 cup each

1 cup chopped carrots (about 2 medium)
1 cup chopped celery (about 2 stalks)
3/4 cup chopped onions (about 1 medium)
3 Tbsp. oil
2 cans (14-1/2 oz. each) fat-free reduced-sodium chicken broth
1/2 tsp. pepper
4-1/2 cups broccoli florets (about 2 small bunches)
1/2 cup instant brown rice, uncooked
2 cups skim milk

COOK and stir carrots, celery and onions in hot oil in large saucepan on medium-high heat 5 min. Add broth and pepper; stir. Bring to boil.

STIR in broccoli and rice. Reduce heat to medium-low; simmer 10 to 15 min. or until vegetables are tender, stirring frequently.

ADD soup, in batches, to blender or food processor; cover. Pulse DO NOT Puree or the soup will not be chunky. Return soup mixture to saucepan. Add milk; cook until heated through, stirring occasionally.

I tried it and hated it....it was a big waste of money! Maybe it will be better on day 2...but I probably won't even bother trying it, it's to bland and has a funny texture...kinda smells weird too. My cats liked it though!

I used almond milk, and added lots of tumeric, cumin and blended till smooth. WoW!!! I love it. Oh and I 86'd the carrots.
