Default Phase 1 Fiesta Salad

The hardest part for me so far on FSD is not eating mexican food. This recipe is easy and tastes great.

Fiesta Salad

1 Head Iceberg Lettuce
1 C Cooked Brown Rice
1/2 C Corn
1/2 C Black Beans, drained
8 Black Olives rinsed, sliced
Salsa to taste - fresh is best - no salt is best :O)

If you miss the sour cream or dressing, you can mix plain ff yogurt with salsa to make a topping.

this sounds really close to what i had for lunch today! i used pinto beans rather than black beans and mixed some cumin and chili powder in to make them as close to refried as i could. then i put that onto a bed of lettuce and a cup of brown rice and added some tomatoes. yum.

Awesome recipe, thanks so much. Living in CA, I'm surrounded by all this WONDERFUL and TEMPTING Mexican food!!
I've eaten this for lunch twice this week and it beat what I would usually eat!
