I'm not sure what the formula is that the equipment manufacturers use when calculating this, but I suppose a gross calculation could be made based on the elliptical's stride length. Of course, stride length varies according to the trainer you're working on. Using 20" as a ballpark stride, that would translate to 3,168 strides per mile. Most companies have these stats listed for each of their models on their website if you wanted to be more precise with respect to your specific trainer.
p.s. Another rule of thumb on ellipticals that I've heard is 100 calories/mile.
