This recipe makes 2 stuffed stuffed mushrooms. I'm still not sure of my carb counts, so I listed my count for each ingredient in parenthesis. I ate these tonight w/steamed asparagus - yum!
Stuffed Mushrooms (4.5 carbs each)
2 portobello mushrooms, cleaned, w/gills removed (2.86)
5 oz. bulk sage sausage (0)
2 T. minced onion (3)
1/4 cup pork rinds, crushed (0)
1 egg (1)
1/2 c. grated Jack Cheese (2)
garlic powder & black pepper
Clean mushrooms, remove gills, brush w/olive oil.
Brown sausage and onion, add garlic powder and black pepper, drain. Let the mixture cool and add cheese, egg and crushed pork rinds. Mix well. Mound filling onto the mushrooms. Bake at 350 degrees for about 20 minutes (till mushroom is tender).
