I use chicken tenderloins for this recipe but you can use what ever you want.
2 lbs. chicken
1 bag of plain pork skins crushed (no carbs)
2-3 beat eggs
salt & pepper to taste
Put oil in frying pan. Place chicken in the beat eggs and roll in crushed pork skins(rinds). Salt and pepper to your taste and fry. You could probably bake this but I have not tried that yet. Easy~ My husband loves it!
