Cream Cheese Pancakes

  • Was found online by my mother so I don't know who to give credit for these yummy little critters.

    1 8oz package cream cheese (softened)
    3 large eggs
    1 packet of splenda
    1 or 2 tbsp whipping cream (we used 2)
    dash of cinnamon

    -In bowl mix cream cheese, whipping cream, egg yolks,splenda and cinnamon until smooth
    -In another bowl whip egg whites until stiff (this is what makes them fluffy)
    -Fold the two mixtures together just until blended
    -Make sure pan isn't too hot and cook up like regular pancakes
    -ENJOY!

    Note: Keep these pancakes very small or they are difficult to turn.
    Ours turned out best at appox. 2 inches

    For the entire batch we figured it to be 11 carbs.. which turned out to be about 1 carb. per pancake

  • I tried these...pretty good! But I think they taste more like french toast THe only con I have with them is that they have a weird texture and they are a little hard to cook.
  • Oh my goodness those are really good but definately hard to flip just had to figure out how long to cook them lol but you know they reminded me more of blintzes cuz they were a little creamy in the center they are great by themselves or with a little sugar free syrup I found one with 0 carbs
  • Single-size, microwavable revision
    Revision for a single-serving pancake/mock-danish/"french-toast" etc...

    Put 3oz of cream cheese in a microwave safe bowl and microwave at 50% power for 40-50 seconds

    Remove the bowl of softened cream cheese and mix in (1) egg, splash of cream, cinnamon and Splenda to taste (I use 1tsp cinn and one packet Splenda). Mix everything together well then put the bowl back in the microwave for 2minutes on high.

    For an extra-tasty treat, add some cream cheese frosting on top. Combine 1oz cream cheese, 1 packet splenda, and 1T butter in a bowl. Microwave on 50% power for 30 seconds at a time until you can mix everything together. I thought it'd be better adding more butter, but it didn't mix into the cream cheese and so I had melted butter running around my bowl (not necessarily a bad thing, but not for making frosting).

    Carbs: About 5 without the frosting and about 7 with the frosting.

    It is quick and easy...maybe too easy

  • I tried these today. Not too bad.

    I added a capful of vanilla, and next time I'd add a bit more splenda, and a bit more cinnamon.

    Drop tablespoon fulls of batter into the pan, and do not flatten the batter out. This makes it MUCH easier to flip.

    I actually liked them best cooled off and dipped in my davinci irish cream syrup.

    I can picture these little cakes...nicely piled (fan like) with a scoop of sugarfree berries ontop, with juice running down the sides of the cakes, and topped with a big ole blob of whipped cream Might make a nice "legal" dessert for when company comes over.
  • I tried the mock pancakes. They were really good. I thought they tasted more like French Toast, but that's fine with me. It was a nice treat compared to eggs every day.
