zesty tilapia with veggies - quick and easy!
This is one of my favorite quick, easy, healthy entrees that can be done on the grill or in the oven....serving for 2
~2 tilapia filets (or any mild white fish)
~any veggies you like...I use squash, zucchini, tomatoes, mushrooms, colorful peppers
~1 Four Seasons Zesty Italian Dressing packet
Place the tilapia filets on tinfoil, slice up as many vegetables as you want and put them right on top of the fish. Sprinkle the contents of the italian dressing packet on top of the fish and vegetables. (I tend not to use the entire packet, because it can get slightly too zesty). Roll up the tin foil over the fish and vegetables. Poke a few holes in the tin foil and place on the grill for 30 minutes or bake in the oven at about 400 degrees for 30 minutes. Be careful when you open the tin foil after grilling or baking...the steam off the fish can be hot!
This dish is excellent because it is low in carbs, high in protein, and rich in omega-3 fatty acids.
