Swiss Steak
 
These are not my notes, but notes of the person that mailed them(first one was from mail, the others I searched the web for):

Braised Swiss Steak

2 lbs. round steak
1 T. Keto Italian crumbs (or leave out)
2 t. salt
1/4 t. pepper
1 T. butter melted
8 oz. stewed tomatoes
1/2 medium onion sliced fine
1/4 c. chopped celery
1 clove garlic crushed
1 T. worcestershire

Wipe steak with damp paper towel._ Combine crumbs
(if using) with salt and pepper._ Place steak on
wooden board and sprinkle half of crumb mixture,
pound into steak._ Repeat on other side and cut
into serving size pieces._ Melt butter in large
chicken fryer or electric skillet and brown meat
on both sides._ Add all other ingredients.
Reduce heat, simmer covered 3 hours or until
tender.

Note:_ Original recipe called for 2 T. bread
crumbs and 2 medium onions._ 2 T. bread crumbs is
to much and I made it without before Keto crumbs
came along._ 2 medium onions is to much carbs for
me so I slice 1/2 onion thin and make it go
farther._ This is excellent served with
cauliflower "mashed potatoes".

Found this exact one on a few sites! :

Swiss Steak

3 lb eye round roast
1 tablespoon tomato paste
5 to 6 large mushrooms
3/4 cup chicken broth
2 tablespoons scallion tops chopped
Seasonings
Slice your roast into 1/2" to 3/4" steaks. Lay these in a cooking pan. Mix the tomato paste and chicken broth in a bowl with a whisk until blended. Pour this over the meat. Slice mushrooms and sprinkle on top of steaks with scallions. Top with seasonings such as salt/pepper/onion powder etc. Bake at 350 degrees for about an hour or until done. The tomato mixture helps to tenderize the meat. Don't use commercial tomato sauces that are prepared for pasta -- they're loaded with sugar and carbs!

Recipe #24 - Swiss Steak

Ingredients:

3 Tbsp. pure vegetable oil

2 pounds round steak, 1-inch thick

1/4 cup soy flour

1 envelope dry onion soup mix

one 8-oz can Hunt's tomato sauce

1/2 cup water



Instructions:

Pour oil in 7&1/2 x 12 x 1&1/2-inch baking dish. Place in oven at 400 degrees. While dish and oil heat, trim steak and pound 2 Tbsp. soy flour into each side. Place in heated baking dish; turn to coat both sides. Sprinkle on soup mix. Pour tomato sauce mixed with water over all. Cover tightly. Reduce oven temperature to 325 degrees F. Bake 2&1/2 to 3 hours until fork tender. Skim excess fat from gravy.



Total Carbohydrates: 30 6 servings=5g each
