I had to share a recipe I made yesterday. I found it on sparkpeople. I hate to cook and made this and LOVED IT.I bought a beautiful Eggplant and cut it into rounds. I baked the eggplant rounds with a bit of PAM and GARLIC powder. 350 degree oven for about 20 minutes. (could of used longer...but still delicious!)
Tablespoon of Pizza sauce and LF Cheese and baked till cheese begged for mercy!
All done!!
I am not even a EGGPLANT Lover but this recipe was so good. So delicious! SUPER EASY!!! Did not miss the bread and I am a bread LOVER the 10th degree!!
