Default Oven Fried Chicken with Potato and Cauliflower Mash...

Last night for dinner I made this recipe from Ask Aida's show on Food Network. I've made oven fried chicken before but never used the triple dredge or the Panko breadcrumbs. The triple dredge was a pain but the breadcrumbs were amazing. I don't like parsley so I added ground thyme and paprika to the crumbs. The chicken was tender and flavorful while the crumbs stayed crispy.

The I steamed some cauliflower to add to some leftover mashed potatoes. When we were about 1/2 thought the meals I asked Hubby what he thought of the potatoes and he said they were good. I mentioned the cauliflower and he said he had no idea I had added cauliflower and couldn't taste it. Yay.

I got the idea for the half potatoes and half cauliflower from this recipe/show.

Thanks for sharing. Have wanted to try cauliflower mashed "potatoes", but was always to afraid lol. Panko are the only breadcrumbs I will use. Not only are they better for you, they TASTE better.
