This was in my e-mail today from World Wide Recipes and sounds perfect as a low carb dish. It's actually a "pizza-like" dish. The number of servings wasn't listed, but just add up the total carbs in ingredients, divide the pie into as many wedges as desired for your carb count.
GARDENER'S NO FLOUR PIZZA
3 cups grated zucchini
2 eggs, beaten
2 1/2 cups mozzarella cheese, divided
1 1/2 cups pizza sauce
1 small green pepper, chopped
6-8 mushrooms, sliced
1/2 cup parmesan cheese, grated
1 tsp. dried oregano
1 T. olive oil
Heat oven to 400*. Squeeze the excess moisture out of the grated zucchini with paper towels. Mix the zucchini, the 2 beaten eggs and 1 1/2 cups mozzarella together and put in a 9-inch pie dish. Bake for 10 minutes. Remove from oven and spread the pizza sauce, vegetables and remaining cheeses over the zucchini layer. Crumble the oregano and sprinkle over the top. Drizzle the olive oil over the top and bake for another 25 minutes, watching carefully so that chees doesn't get overly browned. Optional: Pepperoni or sauteed sausage or ground beef can also be added as a topping if desired.
