Chicken with Tomato Cream Sauce - Recipe from Atkins Essentials Book-YUM!

  • I just got the Atkins Essentials book, which is just a more basic approach to induction. On page 208 there is a recipe for Chicken with Tomato Cream Sauce that is so delicious, rich, and sinful! I thought I would share it for anyone who might like it.

    4 boneless, skinless chicken breasts halves
    1/2 t. salt
    1/2 t. chili powder
    1/4 t. ground pepper
    2 t. olice oil
    2 t. butter
    1/4 c. chicken broth or water
    2 T. oil-packed dried tomatoes (about 6), cut into thin strips
    1/2 c. heavy cream

    1. Season chicken with the spices. In large skillet over med-high heat melt butter in oil. Cook chicken 8 min. turning once, until cooked through. Remove to serving plate and keep warm.

    2. Pour broth and tomatoes into pan and cook, stirring until liquid is reduced by half. Add cream, cook 4 min. more until slightly thickened. Pour over chicken and serve.

    **You can use either dry- or oil-packed sun-dried tomatoes. If using dry, add a tablespoon more broth and cook a little longer to allow the toms to soften.

  • I used a can of diced tomatoes, it was all I had and boy was it delicious!
