Chicken Rice Casserole (Inga's)
Serving Size : 8
2 cups diced chicken -- cooked
1 package Rice A Roni 1/3 less Salt -- prepared as
directed
1 cup celery -- chopped
1/2 cup onion -- chopped
1 cup lowfat mayonnaise
1/2 cup almonds -- slivered
1 tsp. lemon juice
dash pepper
1/2 teaspoon curry powder -- or to taste

Preheat oven to 365 degrees

Prepare Rice A Roni per instructions

Spray 2 quart casserole dish with Pam

Combine all ingredients and place in casserole dish.

Can add crushed potato chips to top of casserole (points not included
in this recipe).

Cook 1 hour at 365 degrees.
Per serving: 343 Calories (kcal); 17g Total Fat; (43% calories from
fat); 15g Protein; 34g Carbohydrate; 43mg Cholesterol; 589mg Sodium
Food Exchanges: 0 Grain(Starch); 1 1/2 Lean Meat; 0 Vegetable; 0 Fruit;
3 Fat; 0 Other Carbohydrates

NOTES : 8 points

We like a few crushed potato chips on top, but they are not included in
the points of this recipe.

This takes a little preparation, but has been a family favorite for
years.

Tip: When chicken is on sale, I buy extra, cook it in the crockpot,
cut it up and put it in 1 or 2 cup portions in a zip-lock bags. Lay
the bagged chicken flat on the freezer shelf to freeze. It stacks better
and this will help it to thaw quickly.
