2 lbs extra lean ground beef or turkey/beef mixture
1 envelope of meatloaf seasoning (make sure no sugar or high carbs)
1/4 cup of garden vegetable egg beaters or southwestern (if you like spicy)
1/4 - 1/3 Cup wheat germ
1/2 tsp garlic powder
1/4 -1/2 cup of finely chopped onion(optional)
1/4 - 1/2 cup of bell pepper(optional)
Heat the oven to 375*F. Mix the seasoning, egg subsitute, wheat germ, spices and veggies in a mixing bowl. Crumble the ground beef over top. Mix with hands or spoon until it is combined well. Place in a loaf pan and bake for 45- 65 minutes (depending on your oven) or until meat thermometer says it is done.
I like to melt a piece of low fat cheese over top of the meatloaf and serve it with steamed cauliflower or broccoli.
This meatloaf is different than traditionl meatloaf but my kids and hubby said it was yummy!
