1lb. or a package from your butcher of pork loin chops (you know, the thin ones)
1 can (~14oz) FF low-sodium chicken broth
1 can (~14oz) diced tomatos (low-sugar with jalapenos if you like some pizazz)
2 tbsp garlic powder or use minced garlic
Big Handful chopped mushrooms
Big Handful chopped red, yellow, orange bell peppers
BIG onion
1 c. brown rice
In large skillet, heat 1 tbsp olice oil and brown the pork chops about 3 minutes per side. While browning, chop the onion and add to the pan. Once chops are browned and onion starts getting soft, add other veggies and the garlic. Then add rice, tomatos and broth. I usually add some pepper too, but its not necessary.
If you really like spice and can not find spicy diced tomatoes, add a can of green chilis. I used to add a few dashes of Worchestershire Sauce before my SBD days.
Stir, cover and let simmer until rice is cooked. Time depends on the rice, if you do instant brown rice (which is not as good for us gals on the beach) it only take about 7 minutes and the whole meal is ready to eat from start to finish in less than 20 minutes. Better brown rice takes longer to cook.
I tried making it once without the rice in the pan, cooking it separate and putting the other stuff over the top. But it just did not taste the same.
