Creamy One Dish Casserole

  • I made this recipe last night and it was absolutely delicious and south beach friendly.

    Creamy One Dish Casserole

    10 Ounces Whole Wheat Penne Rigatte pasta (measured while dry)
    3/4 lb gorund turkey
    1/3 package fat free cream cheese
    1 can chopped spinach
    1/3 cup cooked brocoli florets
    5 teaspoons cheddar cheese sauce mix (i used the one from the Kraft Mac and Cheese)
    1/3 cup onions
    1/2 cup fat free milk
    1/2 teaspoon transfat free butter
    salt and pepper to taste
    3 teaspoons all purpose flour (sacrifice it since the amount is miniscule)

    Instructions

    Boil that pasta according to package directions.

    Prepare the ground turkey in a saute pan with salt and pepper.

    Sautee onions in with butter, adding a bit of water occasionally to prevent them from sticking. After onions are tender, add milk and then cream cheese and cheese sauce miix after the milk is heated. Mix flour in a few tablespoons of water until mixture is smooth then gradually add to sauce mixture.

    Drain spinach and chop brocoli florets.

    In a casserole dish, layer pasta, then ground turkey, then spinach and brocoli and cover evenly with sauce.

    Cover and bake for 25 mins or until sauce is bubbling then uncover and let bake for 5-7 minutes.



    Hope you guys enjoy because I did. Also, garlic and sweet pepper, or shallots can also be sauteed for the sauce I just prefer onions alone in mine.
  • I wouldn't use the Kraft mac n' cheese stuff, way too much sodium and other things in it that aren't quite SB friendly. I'd use some reduced fat real cheddar instead. But otherwise, this sounds really good.
