1 grilled chix breast or frozen (cook chicken and cut up into small pieces)
green/red pepper/onion
2 whole wheat tortillas or use 1 and cut in half
LF cheese of your choice
dab of LF sour cream or salsa (optional)
put tortilla in skillet with a dab of olive oil. Add all desired ingredients. Add another tortilla on top. Bake for a few minutes to harden the tortilla and flip and bake the other side as well.
I just may make that for lunch today but will add olives and chopped onions. I use a single small tortilla and fold it in half. (Some refried beans helps stick it together.) Then I bake it in my toaster over at 350 for about ten minutes.
Remember that one small tortilla is a single serving of bread which is why I use this method.

I do this a lot and add black beans, salsa, cilantro, and a squeeze of lime. There's something about the combination of lime and cilantro that makes me addicted. lol
