Apricot, Goat Cheese, and Pistachio Salad

  • Serves 1

    Ingredients:
    7 dried apricots, sliced
    2 ounces goat cheese, crumbled (I use fat-free feta, as I don't care for goat cheese.)
    1/4 cup shelled pistachios (or pecans, walnuts or mix)
    2 cups lettuces, chopped (romaine, bibb, red leaf, etc.)
    1 tablespoon balsamic vinegar
    1 tablespoon olive oil


    Instructions:
    Mix ingredients and season with salt and pepper to taste. Toss and serve.

  • This is soooo delicious. I've had it for lunch about 4 times in the last week. The first time I made it with feta, but then picked up some goat cheese crumbles, and the combination of the creamy goat cheese with the apricots is just perfect. I don't think I'll get tired of this for a long time!
