Oven Fried Chimichangas
 
Found this recipe on a shared website. Adjusted it for South Beach.

2/3 cup your favorite salsa
1 small tomato, chopped
1 teaspoon ground cumin
1/2 teaspoon dried oregano leaves, crushed
1 1/2 cups cooked chicken, chopped
1 cup shredded lf cheddar cheese
2 green onions, chopped with some tops (about 1/4 cup)
6 (8 inch) WW flour tortillas (I used homemade)
2 tablespoons olive oil
shredded LF cheddar cheese, for serving
chopped green onions, for serving
picante sauce, for serving

1. Mix chicken, salsa, cumin, tomato, oregano, cheese and onions.
2. Place about 1/4 cup of the chicken mixture in the center of each tortilla.
3. Fold opposite sides over filling.
4. Roll up from bottom and place seam-side down on a baking sheet.
5. Brush with olive oil.
6. Bake at 400°F for 25 minutes or until golden.
7. Garnish with additional cheese and green onion and serve salsa on the side.

These are pretty fantastic. Easy to add extra veggies in and make variations. Maybe chicken and broccoli with cheese?

A quick Internet search brought up this recipe:

Makes 10-12 tortillas
* 2 cups whole wheat flour
* 1 tsp baking powder
* 1/2 tsp salt
* 2 T olive oil
* 1/2 cup warm tap water

Combine flour, Baking powder and salt. Add olive oil and stir until well combined. Put in warm tap water 1 T at a time until dough can be gathered into a ball. Add more water if needed 1 T at a time. Knead on floured surface 15-20 times. Let dough rest for 15 minutes (when I'm pregnant and making it I rest too!!) Divide dough into 10-12 equal portions and shape into balls. On floured surface roll out ball from center into a circle. Cook on ungreased skillet over medium-high heat on each side about 30 seconds or until puffy. You can cook them longer until they are crisp like a big chip. My daughter loves the crispy ones. Wrap them in a towel to stay warm. Great with Refried Beans and Spanish Rice. I also love them as a dessert with honey and butter on them...yum I want some right now.

I made these last night and everyone loved them. Even a picky little one. VERY GOOD!
