Default Shrimp, Spinach, and Tomato Pasta

Hi

This was my dinner. I didn't have a plan on what to cook tonight. This kinda got thrown together. I don't actually measure when I cook so the measurments are guestimates.

You could use chicken instead of shrimp, even canned tuna, or salmon.

olive oil ( once around the pan)
minced garlic 3-4 cloves
onion about 1/4 cup
2 can no sugar added tomatoes diced(can use fresh tomatos but I only had canned)
Spinach about a bag full
whole wheat pasta any kind
Shrimp ( I had a bag of frozen about 30 shrimp)
Italian seasoning to taste
salt and pepper to taste

Cook pasta as directed
Saute onion, garlic, tomatoes until onions are opaque.
Add italian seasoning add spinach and stir till mixed in well and wilted.
Mix tomato and spinach mixture into cooked pasta. Cook shrimp in pan that you sauted spinach/tomato mixture in. Add shrimp to pasta Salt and pepper as needed.

Stir all together and serve with parmesean on top.
