Mock Abalone from CA.
Take 4 single chicken breasts and slice each one thinner...Pound the heck out of each one of them...using mallet or edge of saucer. The more you pound the tenderer it will be...then put these breast into bowl with 1 bottle of Clam Juice (no calories). Cover, and let sit in refrigerator over night.
Drain breast and dip into bread crumbs (1/4 cup is enough for 7 slices lightly)...Brown in skillet with olive oil on both sides...add salt and pepper (I also love garlic or dried onions on mine). When all browned, add a little water and cover and cook about 15 minutes more...This is so tender you can cut it with a fork...good hot or cold.
