This is a recipe we have made for years. I was glad to see it's ok for P1, assuming you use the FF or lowfat versions of yogurt/cheeses.
1 c cottage cheese
1 c shredded cheddar cheese
(3 T flour which I leave out)
1 t salt
1/4 t. dried minced onion (I used about 1/4 cup chopped onion)
2 T yogurt
2 10 oz packages frozen chopped broccoli, thawed
1 8 oz can water chestnuts, drained and sliced.
Beat eggs slightly. add remaining ingredients. pour into prepared baking dish (recipe says pie pan, but it's too much for my pie pans)
sprinkle with paprika
bake 350deg about 50 min, until firm.
