This recipe is from Martha Stewart--I guess I'm allowed to post it here? :/ I added a few things to the salsa. Turned out great and took seriously less than fifteen minutes including cooking time!
Cayenne rubbed chicken with avocado salsa
Season chicken breasts with coarse salt and pepper (I used three...any more than that and I'd double the salsa; imo it was only enough for two, but we love avocados). Rub w/ 1/4 t cayenne pepper (I didn't measure this or rub it, I just shook some on and called it done). Sear in a hot skillet with a little olive oil on both sides until done through. The cayenne smoke is horrible so when it warms up outside this is going on the grill!!
While the chicken cooks chop and mix up:
1 diced avocado
some finely chopped red onion
a few strips of orange bell pepper
a biiiiig handful of cilantro
salt
squeeze generously with lime juice (Martha says 2T--I didn't measure, just added to taste)
Serve the chicken topped with the avocado salsa.
When I get to phase two I'm going to try this salsa with mango instead of the orange pepper, and maybe a spicy pepper like a little habanero.
