4-6 thin cut pork chops
2-3 banana peppers
1 bell pepper (I used white, but not necessary!)
1 red tomato
2 small green tomatoes if you can find them (if not, I would add 1 tsp white vinegar to this for a bit of a bite!)
salt and pepper
olive oil
1 tsp thyme
Peel and chop tomatoes. Chop peppers into small pieces. Spray a non-stick skillet with cooking spray, and combine peppers, tomatoes, salt and pepper, and thyme in the skillet. Cook down until a good saucey consistency (about 20 minutes on medium to medium-high).
Meanwhile, brush chops with olive oil. Place on a cookie sheet sprayed with cooking spray and broil in oven 5-8 minutes or until lightly browned. Flip chops and broil another 4-5 minutes. [You could also grill the pork chops]
Top each chop with 2 T sauce.
Yum! I love the bite the tangy green tomatoes give to this sauce. A great way to use up peppers and tomatoes. Could also add onion and garlic if you have it around and use Italian seasoning for more of an Italian flair!
