Default Use bean sprouts as a 'bed'

Not exactly a recipe, so please move where appropriate.

My hubby detests cauliflower (boo), so I decided to use quickly sauteed bean sprouts as a bed for saucy dishes like curries, stir frys, etc. You can even use them raw, but I like to saute them just a bit. Yummy, crunchy, and a nice addition-

That's a good idea. I've never tried it but I have used shredded cabbage for the same purpose.
