I could've sworn I posted this before but couldn't find it in a search so here you go! This is simple and much better than it sounds. It's my favorite pasta sauce in P2.
-1 med eggplant, peeled and chopped
-1 can chopped tomato, undrained
-1 packet splenda
-2 tsp dried basil or 1 1/2 T fresh
-2 tsp chopped garlic,or more to taste
-salt and pepper to taste
-1 1/2 T olive oil
Place chopped eggplant in a strainer in the sink, sprinkle liberally with salt. Fill a big ziplock bag with water and place it on the eggplant to press it. Let sit for 30 min. This gets out the bitter stuff.
Sautee eggplant for about 5 min in the oil. Add garlic and basil and sautee for about a minute. Add tomatoes and splenda, stir, and let simmer for about 15 min. Use as a topping for baked or grilled chicken or fish or pasta in P2.
