Almond Dijon Chicken
 
I found this yummy recipe on another recipe website, and wanted to share. I don't have the calorie information, so i hope it's okay to post it here?!

Almond Dijon Chicken

3 boneless/skinless chicken breasts, halved
3 Tbs. Butter Spread (I can't believe or Benecal (sp?)
3 Tbs. Dijon Mustard
1/2 Cup crushed or chopped almonds

Mix butter and dijon together in a flat dish and coat chicken with mixture. Sprinkle almonds on top.
Bake at 375 for about 1/2 hour, until the juices run clear, or the chicken has no sign of pink.

Serves 6

You can also do this in the morning and let it sit, covered, in the baking dish in the fridge so it marinates a bit more...

Don't know where I've seen this before, but this recipe is great! We also love it made with pecans for more flavour than almonds.

This is still my favorite chicken recipe, for all phases - works really well with almond meal too :) YUM

This one sounds great i am planning to make it tonite. Can i just divide this recipe in 3 to prepare just 2 chicken breast halves as it is just me that i will be cooking this for . My husband isn't on board on this trip with me lol....

I served this to guests and got rave reviews. It has a wonderful, delicious flavor that we all enjoyed! I used stone ground mustard and a drop of honey as that is what I had on hand.

I made this last night ...a hit with everyone in my family ... I did let it marinate for a couple of hours ..... very easy to make :) Thanks ... I love getting recipes from here ...
