Default Cauliflower stuffed 'potatoes'

Not really sure what to call this 'recipe'. I had leftover 'Surprise' mashed potatoes made from cauliflower, and remembered when I was in college and there was a baked potato stand where you could get a baked potato topped with anything (broccolli, cheese, ham, chicken, salsa - you name it). So, for lunch, I took the leftover smashed cauliflower, chopped up some canadian bacon (or pea-meal ham), diced/shredded about a 1/4 c l/f cheese, mixed it all together and seasoned with s&p. I microwaved it for about 3 minutes on high. It was delicious! Reminded me of those baked potatoes I used to have in college - filling, yummy. Now when I make surprised mashed potatoes, I'll always make extras so I can make 'stuffed' potatoes. Broccoli, ham and cheese was my favorite.... hmmm, think I'll go have some now....
