Changa, I've combined the taco bake with the Salsa chicken recipe -- a definite keeper that one! I just followed the salsa chicken recipe, but baked it on a bed of refried beans that I mixed some of the salsa in ... A B C DELISH!!!!

Made this tonight and it was very good but it made a TON! We had two huge servings and only ate 1/3 of the casserole. I would say it would serve 6 if you serve it on lettuce, and many more if you were using it to fill WW tortillas.

Thanks for the recipe - lots of leftovers!

We had this for our day 3 dinner tonight, over salad with salsa and ff sour cream. Delicious! I didn't even eat that much and am so full and content - something I've noticed about these recipes. Lots left for lunch tomorrow, too

Are you sure I'm not cheating, because this was almost sinful lol

Best SB recipe yet! Thanks for sharing it. I use extra lean ground turkey & Amy's refried beans. (vegetarian) It won my boyfriend over as well

I made this for a dinner party and everyone loved it. My husband makes me make it every week! He loves it..and is not on SB! It is an excellant thing to make ahead for the week also!

This was absolutely great! I made homemade guacamole and salsa to go with mine, and topped it with LF sour cream, lettuce, black olives, and green onions. It also makes plenty of leftovers - so I won't have to cook for a few days!

I made a huge pan of this. I had my son over who is by far the finickiest of eaters, and his friend who's allergic to everything, including dairy, tomatoes etc. WEll, Dustin hasn't been bad and knows what he can eat in very low doses, so he allowed himself some of this. I had two pieces, and the pan is gone. My son said "This is diet?" I said no, just the right carbs and dairy, right food.

I used an entire jar of pesto in mine (four tablespoons instead of three). I also used black beans in place of refried. My son wanted sour cream on top. But he liked it without the sourcream!

So, from two teens, EXCELLENT RECIPE. Dustin even took the recipe for his mother to make at home.

THANK YOU for this recipe!! I am on day 6 of Ph1 and was seriously getting bored with my meals- sometimes to the point where I didn't want to eat. But this AWESOME recipe totally saved me last night! It was so delicious and satisfying- even my 5 yr old son loved it! This has just reinforced my will to find different recipes and options to keep me satisfied and keep on keepin' on!!

Lori - Pesto in your taco bake? interesting...

I make this a lot on P2 as well....sometimes wrapping it up in a ww tortilla and other times adding brown rice to the beef mixture. Both are excellent!

Here's a twist on the taco bake (not a complicated one)
I assembled mine on Monday night after making black bean chili (with beef for a change) and I wanted to pump up the veggies a bit So I drained the juice from a 28 oz can of petite diced tomatoes (you could Use Rotel)
1 layer ff RF beans
1 layer chili
1 sizeable layer tomatoes
1 layer rf cheese
Since everythings cooked you can nuke it for 10-15 min on 50% power or do what dh did when I was out and scoop and nuke individually
The tomatoes make it really fresh!

My taco Bake is a tad different too...I got the recipe off the Yahoo! South Beach group years ago...

1lb Ground Beef or Turkey, browned
Rotel
Taco Seasoning
Cheese
FF Refried Beans

Preheat oven to 350
Layer the Refried Beans into a casserole plate and add a layer of cheese (how much is up to you). Put in the oven for 15 - 20 minutes
While that is cooking, brown the meat, drain, add the Rotel (drain) into the meat along with the Taco Seasoning.
Take the Refried Beans out of the oven and layer the Meat/Rotel mixture onto the beans. Add another layer of cheese. Cook for 20 or so minutes.
This is really delicious and easy to make!

we made this and enjoyed it, but I wasnt keen on the taste of turkey. Next time I make it (and I will!) I will definitely use ground beef and maybe sneak some red peppers in there somehow....
