Sautee 1T olive oil, 1/2 onion, 3 cloves garlic, 1 cup chopped mushrooms, and 1 yellow squash (or zucchini) over medium heat until soft. Add salt and pepper and 1tsp worchestire sauce. When veggies are soft, add 1/4 to 1/2 cup LF cream cheese and stir until combined. Add 1/4 to 1/2 cup squished chick peas until stuffing reaches desired consistency. Scoop into about 6 hollowed out squash. Bake at 350 about 45 minutes, or until soft.
