...actually in a ramekin, though I imagine you could do it in the microwave with a bowl.
Its pizza you eat with a fork!
1/4C Pizza Sauce/tomato Sauce
(a no sugar added kind)
1/3C RF Mozzerella
(or any reduced fat cheese of your choice)
Various Pizza Veggies
(anything will do, I used 1/3 of a red pepper, 1/3 jalapeno, 1 1/2T of red onion & a chopped garlic clove)
Precooked Meat Chopped
(I used turkey pepperoni, but again, anything you like for pizza will work)
**long shallow ramekins work best for this**
(Mine was deep and tall see note below recipe)
Preheat oven to 350°F
Spray a pan with cooking spray and cook veggies on medium heat til softened (I threw the chopped pepperoni in the pan as well to crisp up a bit)
Remove from heat & stir in pizza sauce.
Transfer mixture to ramekin, top w/ cheese
Put in oven and bake for 10 - 15 minute til heated through and cheese is melted (I put it on broil for the last few mins to get the cheese nice and gooey)
Serve in ramekin, caution; dish is extremely hot!
*Note: I didnt have long shallow ramekins, so I used my deep narrow one, I mixed half the cheese w/ the sauce & veggie mixture and sprinkled the remainder on the top.... so there was cheesy goodness throughout.
