This recipe was adapted from the
sweet almond crepe recipe in the ph1 breakfast section
Just had this for lunch and it was delish
Serves 1
1 Lrg crepe or 2 small
Ingredients:
For The Crepe
1 Egg
2 TBSP Low Fat Ricotta
2 TBSP Almond Meal
1/2 tsp Mustard Powder
1/4 tsp Garlic Powder
For the Filler
2 Slices of Deli Ham (low fat)
1/2 Oz Shredded Part Skim Havarti (or other rf cheese)
Few Slices of Red Onion
For the Sauce
1/4 TBSP Mayonnaise
1 tsp Horse Radish
1 tsp Yellow Mustard
Splash of Water *(optional, makes for a thinner dressing)
***note: This makes more sauce that you need, I only ended up using 1/2 of it***
Directions
Coat pan with non stick spray heat on medium low
Mix together all 5 crepe ingredients and pour into pan so there is a thin layer at the bottom.
Cook until bottom is set.
Sprinkle cheese down the middle of the crepe, top w/ ham, onion & sauce (I only used about 1/2 that I made) Cover with lid until cheese starts to melt (60 seconds ish)
Using a spatula fold over sides, remove to plate, serve hot.
