Red lentil stoup
2 cups red lentils
1 and a half box containers of chicken stock
1 small onion
3 cloves garlic
1 tablespoon ICBINB
1 can petite diced tomatoes
(all to taste - I used about two palmfuls of the first two, couple sprinkles of the second).
PH 2 - add brown rice
In stock pot, sautee onion and garlic on medium low heat with ICBINB for 5-7 minutes. Add stock and lentils and spices. Cook for 15 minutes on high (bring to boil), then add tomato and set to simmer another 25 minutes.
You can add brown rice in PH2 (which is what I did).
