Default Meatloaf Parmesan

Sauce: Chop 1 red pepper, 1 green pepper, and 1 onion. Saute in 1 tsp extra virgin olive oil. Add one large can tomatoes (crushed, diced, whole, etc.). Puree all ingredients with a handy-mixer. Add a little salt, pepper, cinnamon, nutmeg, garlic powder etc. to taste. Leave on low heat.

Set oven to 350.

Meat: Mix 2 lbs ground turkey breast with 1/2 cup LF grated parm, 2 eggs, and 1/2 cup garbanzo flour (I think this is allowed because the only ingredient is garbanzo beans). Spread on the bottom of an 8x13 pan.

Cover the meat with about half of the sauce. Place in the oven for 45 mins to 1 hour and bake at 350. About 10 mins before it is done, take it out and cover with about 1 cup of LF mozz. Return to oven for the duration of the time. When it is done, slice and serve with as much of the remaining sauce as you would like. Enjoy!
