Roasted Vegetable soup
I am new here so please understand... I am pretty sure this is phase 1 compatible. All I know is I loved it and so did the wife.
A bunch (maybe 20) of campari tomatoes cut in half
2 lbs of cremini mushrooms whole
4 red bell peppers cut into pieces
sweet onions cut into large pieces
2 or 3 zuchini cut into pieces
toss all the veggies in large bowl with salt, pepper, cumin, dried oregano, garlic powder and olive oil.
Spread on rimmed pan and roast at 300 degrees ( I used convection roast so adjust accordingly) for about 1.5 hours. the veggies with be very dark and smell great.
Add in batches to blender with chicken stock( I used a full quart) and puree
put in sauce pan
Add 1 pint of fat free half and half
taste for salt and pepper I added a lot of pepper
sweetener I used splenda
about 1/4 cup apple cider vinegar
1 small can tomato paste
Let simmer for an hour or so...
I served this with leftover chicken breast I pulled.
It was just outstanding....
I made a lot since its cold here in DC and I wanted something for lunches.
FYI.. I am not a cook who measures anything, I cook by taste so taste often adding salt and pepper and sweetener as needed.
Being new.... Since I started SB I have lost over 80Lbs (I started in July 2010). I exercise 6 days a week and feel great!
