Buffalo Chicken Strips

  • For the chicken:

    2 chicken breasts, cut into strips
    1 egg
    2 T. buttermilk
    1/2 t. cayenne

    1/4 c. almond meal
    1/2 c. grated parmesan


    Whisk the egg, buttermilk, and cayenne together. Marinate the chicken in for a few hours. Preheat oven to 350*. Dip chicken strips in dry mix, lay evenly on baking sheet sprayed with cooking spray. Bake 15-20 minutes, turning once. Before serving, brush with wing sauce.

    Wing sauce:

    3 T. Tabasco or similar hot sauce (or more to taste)
    2 T. spray butter (cap removed and poured)
    2 T. olive oil

    Mix well in cup.
