Coll's Modified Crack Slaw

I wish I remembered where I got this recipe... it was on one of the SB forums I used to visit....

Coll's Modified Crack Slaw

*1 bag of Dole Cole Slaw Mix (Phase II because of the carrots) or Shredded Cabbage (Phase 1).
*2-4 tablespoons of sesame oil. The sesame oil makes the dish so it's important to have it.
*1 pound lean ground beef or cubed chicken breast
*Red Pepper Flakes.

Brown meat till it's cooked, place in strainer and tap off fat. Place meat on side. Heat up sesame oil in another pan, then add in shredded cabbage. Cook to desired tenderness then you sprinkle some red pepper flakes on top and even can add soy sauce. Very Easy.

I had the crack slaw last night and I would make the following modifications per my own taste:

Use ground chicken instead of beef, add some crushed peanuts to finish it off and use lettuce to wrap it like an egg roll! I think the beef made it a bit heavy.

Although I think this recipe would be great "as is", I used only 1/2 pound of meat (buffalo) and I think I would actually enjoy it more with chicken. For me, I think chicken or even really small squares of tofo would have give more of an Asian feel to it. I'll definitely serve this again.

Heres a link to another version which adds brown rice, which I think would be great, too. http://www.deepsouthdish.com/2009/11...ound-beef.html I did add onions, garlic and soy sauce to mine. The blogger discusses how this dish got its name, which I thought was interesting.

Hi Debbie-

DW wanted this again tonight! Go figure?!?!

So I tried it with chicken, added some minced onion, garlic and pepper to the chicken when it was cooking, and added some snow pea pods to the cabbage and topped it with 10 smashed peanuts. DELISH. We tried to wrap it in iceberg thinking we could double wrap it but to no avail -- instead I made a little salad of the lettuce (so as not to waste it since we really don't eat iceberg) and it was a little much on the lettucy/cabbage front. Shoulda stuck with my first instinct to get hearts of romaine and make "boats."

Still yum though!

We're having it again, too, Jen. Crackheads! I'm sauteing ginger and garlic, before adding cabbage, green onions, and soaked dried mushrooms, lily buds and :fr: wood fungus...adding a scrambled egg at the end for MuShu Chicken. Instead of ground chix, I took a small breast and sliced it into matchstick sized pieces.

This was really easy and has lots of options for variety! I have Baked Brown Rice in the oven for DH and a salad w/Asian Sesame dressing for myself.

I made this today for lunch. I really enjoyed it! I was looking for a way to use up some leftover chicken kebabs and thought this would be a great way to use it. I chopped up the chicken, peppers and onions and threw it in a skillet to warm a bit, removed from pan and then prepared per the recipe. I topped with a bit of sriracha and it was fabulous. VERY fast and easy.

Add me to the crackhead list. I had it with red pepper, onion, mushroom, carrot...oh, and pea pod. Guess that would make it a stir fry, huh? Also, leftover chicken, instead of beef.

Do you guys think this would be ok with ground turkey? I have a bag of coleslaw mix and am dying to try this but I don't have ground beef and I just used up all my chicken yesterday in a non SB friendly recipe for the kids.

jenne1017 02-24-2010 12:19 PM

Yes K! I like it better with ground chicken. But ground turkey is similar. let us know what you think!

Kslosingit 02-24-2010 10:09 PM

Great! Thanks! I am all set to try it tomorrow and will let you guys know how it turns out.

Ok, made this tonight with my ground turkey. I think I must have done something wrong because it was ok but not "crack". We liked it with hot sauce, but then it's really a whole different meal... I think next time I will add vegetables and skip the crushed red pepper.

I made this last night for supper.
Followed the recipe basically but used shrimp and snap peas and felt like I was having Chiniese food. Nice quick supper because I made macaroni and cheese for the family.

Natasha1534 02-04-2011 01:45 AM

Made this tonight w/o any meat in it. I added a little soy sauce which made it a little salty for my tastes, so I added just a squirt of Agave Nectar. PERFECT!!! I also added ginger, black pepper, and sesame seeds. YUM!!!

We make something very similar (inside out egg roll) and it calls for a bit of 5 spice powder. You might like that addition.
