Curried Chicken Salad

  • This is P1 if you use no grapes. If you are on P2 the grapes add a nice sweetness.

    The ingredients to this can be tweaked to your tasting. I normally don't measure but just mix it up til it has the texture, spice and flavor I like .

    Ingredients:
    3 large chicken breasts, pan-fried with salt and pepper and a dash of olive oil
    1 cup finely sliced celery
    1 cup halved red grapes
    1/3 cup cashews
    1 cup plain, NF yogurt
    1/4 cup mayo
    2.5 tbsp of curry powder (more or less depending on how much spice u like)

    Directions:
    After you've cooked the chicken either shred it with or a fork or cube it into bite-sized pieces. Let it cool for a few minutes. In a large bowl mix the chicken with all the other ingredients until well-mixed. Serve on top of a salad, in a pita, or your favorite SB bread.

  • I use to make a recipe very similar to this that I called Fruity Curry Chicken Salad because I also had diced apple and raisins. I'm going to have to try this and see how it compares. Thanks for the recipe!
