Default Roasted Zucchini

This is an entree at my house, but can also be a great side dish.

Roasted Zucchini

1 large zucchini
1 T. extra virgin olive oil
1/2 C. Parmesan cheese, grated
1/2 tsp. dried thyme
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/4 tsp. garlic powder
2 T. fresh parsley, chopped (or 2 tsp. dried)
salt & pepper to taste

Preheat oven to 350 degrees. Cut zucchini in half long ways, then quarter each half. Brush pan with extra virgin olive oil. Place zucchini in the pan and brush with extra virgin olive oil. Sprinkle with spices and parsley, then top with Parmesan cheese. Bake for 15 minutes, then broil for 2-3 minutes until the top is brown.

Side note: If you have an exceptionally large zucchini, it can take considerably longer to cook. We had a huge one from the garden and cooked it an extra 15 minutes at 350, then broiled it for about 5 min to get a good color on top.
