Made this for dinner tonight and thought is was fantastic.
I adapted it from Southern Living.
1 med. onion, coarsely chopped
1 T. olive oil
1 (15 oz. can) Cannellini beans, rinsed and drained
1 c. halved grape tomatoes
1/2 c. chopped pitted Kalamata olives
2 T. chopped fresh basil
4 (6 oz.) salmon fillets
S&P to taste
1. Preheat your oven to 325 (I used my toaster oven).
2. Lightly spray a cookie sheet and place salmon pieces on the sheet. Season w/ salt & pepper. Cook in the oven while putting the veggies together.
3. Saute' onion in hot olive oil in a saucepan for 2 min. or until slightly soften. Add beans, olives, & tomatoes; cook over med. heat, stirring occasionally, for 2 min. or until heated through. Remove from heat & stir in basil.
4. Place a scoop of beans on the plate w/ a piece of salmon. Squeeze a wedge of lemon over it.
