I really like this... but it doesn't look pretty, give it a try if you like. I've made it twice now. It's not a fine science recipe, I just threw it together in a crock pot!
1 bottle premade no sugar tomato sauce
1 12 ounce can stewed tomatoes with liquid
2 6 oz cans dized tomatos with liquid
add as much as you like of good soup veggies: cauliflower, broccolli, green beans, asparagus, fresh garlic, scallions, ...etc
1 lb lean ground beef or turkey
sauteed mushrooms and onions (approximately 2 cups of sauteed mushrooms, 1 cup onions).
1 container no fat ricotta (this gives the soup an interesting grainy texture you may or may not like and can opt out of)
2 cups low or no fat mozzarella cheese
add all the ingredients to a crock pot in whatever order you like and let it stew for 4-6 hours. Season to taste, I use an italian blend.
I packaged it last time in tupperware bowls and am taking it for lunch at work all week. YUM.
