Default Spinach, Mushroom & Mozzarella Supreme

I got this yummy recipe from the Hungry Girl website. It's great "comfort food", and is very filling.

Spinach, Mushroom & Mozzarella Supreme

2 16oz. bags of frozen chopped spinach, thawed, drained well, and patted dry
1 1/2 cups sliced mushrooms
3 wedges Laughing Cow Light, any flavor, room temp.
1 cup diced onions
1/3 cup shredded ff mozzarella
3/4 tsp. garlic powder
Optional - salt & pepper to taste

Preheat oven to 350*.
In pan sprayed with nonstick spray, cook onions until lightly browned.
Make sure all the excess water has been removed from spinach.
In mixing bowl, combine spinach, onions, cheese wedges and garlic powder. Mix well.
In medium casserole sprayed with nonstick spray, spread half of spinach mixture. Layer with half of mushrooms, then repeat with another layer of spinach, then remaining mushrooms.
Sprinkle top with the mozzarella.
Bake for 25 - 30 minutes, until the cheese starts to crisp slightly.
Season with salt and pepper if you wish.
Makes 6 servings at 106 calories per serving.
