Jenns Stuffed Bell Peppers
 
I fixed this today for something a little different from the ordinary salad or just meat and veggies....it was wonderful!
You will need:
7-8 Large Bell Peppers
1.5 pounds of lean ground beef
Taco Seasoning (check the label for added sugar)
1 can Diced Tomatoes with Green Chiles
1 Large can FF Refried Beans
Cheese (I don't use FF and lose just fine, just watch your portions) I also used Cheddar on half, and Pepperjack on half

Preheat Oven at 375
Brown the meat...drain and add taco seasoning and saute til most of the juice is gone
Cut the tops off the peppers and clean out the middle (seeds, etc)
add 2 tbsp refried beans, press down into the bottom of the pepper
add ground beef/tomato mixture on top of the beans

Cook for about 45 minutes on 375
Top with cheese and put it back in the oven for a few minutes to melt
Enjoy!

Jenn, this was SUCH a great idea! I made it tonight this way:

1 red bell pepper, cored and cleaned, stuffed with:
1/2 cup vegetarian refried beans that had been sauteed with onion and garlic and chili powder and cumin
1/2 cup of soy "meat" crumbles that had been sauteed with cilantro seasoning, diced green chiles, cumin, garlic powder, onion powder, and chili powder
1/8 cup of reduced fat Mexican blend cheeses

I baked the stuffed pepper in a 400 degree oven for about half an hour and then served it over a bed of romaine with about 1/4 cup of salsa and 2 tablespoons of light sour cream. SO GOOD!

Here's the nutritional info:

368 calories
14 g fat (5 g saturated, 3 g polyunsaturated, 4 g monounsaturated)
37 g carbohydrates (11 g dietary fiber)
26 g protein
