Couldn't post in the thread up above, so I just wanted you all to know that I made the Taco Bake with vegan soy crumbles (the stuff that's supposed to act like ground beef) and it came out just as yummy as everyone had predicted!
I sauteed some onions and added them to the refried beans before baking them. I put half of the spices in the beans and half in the "meat" mixture and topped the whole thing with some chopped black olives, cilantro, and scallions. Served it with light sour cream and commercially prepared salsa. Ate it on a bed of shredded lettuce, which filled me up (but not enough to not have seconds!).
