I just threw this together last night and everyone seemed to love it!
1lb. chicken breast cubed
1 box frozen spinach thawed & drained well
1 small yellow onion diced
2 cloves garlic
1 small can sliced mushrooms
1 can of NSA diced tomatoes with the juice (28 oz. )
1/2 cup low sodium chicken broth
brown the chicken in 1TBSP EVOO (Extra Virgin olive oil - regular works too!)
add the onion, garlic & mushrooms
cook about 5 mins
then add the spinach, tomatos & chicken broth
let simmer on low for 15 mins
I served mine over brown rice and topped with grated parm cheese.
If you are are on PH1 I would omit the brown rice & eat it like a soup
The DH loved it, the DD & DS just weren't sure about brown rice but put cheese on it and most kids will eat it!
made 4-6 servings I have leftovers for lunch today
