Quickie Jambalaya

    I discovered this in one of those weekly planner things in WW magazine and finally tried it...I tweaked it to my own ingredients so I put in the brand names here:

    2 oz Healthy Choice Polska kielbasa (80 calories, 2.5 g fat, 0 fiber)
    1/2 cup onion
    1/2 cup green pepper
    1 tsp minced garlic
    1 cup cooked brown rice (I use the stuff you just toss the bag in boiling water for 10 minutes--I think it's 4 points for a cup
    3/4 cup crushed tomatoes
    1 tsp Joe's Stuff (or your favorite Cajun seasoning)
    hot sauce to taste

    Saute the kielbasa, onion, pepper, and garlic for 3-5 minutes. Add the rice, tomatoes, and seasoning. Heat for another 3-5 minutes. Viola! Quickie jambalaya that is surprisingly tasty. And depending on the rice you use it's anywhere from 5-6 points!
